I made some changes based on what I had/cut the qty, used golden raisins etc etc, I thought it was very good so I thought I would post. Ok. Yes. YES!! This sounds so good. AND, I notice that she mentions: if we don't have farro, then use rice or quinoa. I have never eaten, tasted or cooked farro. I wonder if my Instant Pot might make quick work of that. THANK YOU FOR SHARING YOUR FIND, APPLECRISP!

I buy 10-minute farro at Trader Joes, always good to save time. 😉
Okay, so I did try this recipe and it was good but didn't knock my socks off. I think that the dressing was a little bland-- But it does have potential.... maybe apple cider vinegar instead of white wine, and a bit more? A little extra dijon? Garlic?? I'll play with it. I did, however, really like the combo of spinach, apple, pecan, and feta--- what's not to like?!
