This is an attractive salad when you have guests. No need to measure here. Just assemble the following ingredients more or less as shown in the photo: Baby spinach (stems removed), canned artichoke hearts (not marinated with herbs), black olives, and Parmesan cheese shavings. Season with salt and pepper, then drizzle a little extra-virgin olive oil and a little lemon juice (or if you prefer, white wine vinegar). I's done!

Seems like you could use the marinated artichoke hearts and skip any additional dressing. I'd probably add some lettuce or other greens (I'd say just more spinach -- which I might also do, but I don't like the way too much spinach feels on my teeth). I can see adding some oranges or mandarins too. Maybe it's time for lunch.....

You could absolutely use marinated artichokes if you like the flavor. Also, you just gave me an inspiration. I am going to try sliced orange or orange zest (or both) with this salad. Thanks.

I admire anyone who stems baby spinach; I'm lucky to do it for the big spinach unless the stem is super woody. That's for DH and myself, LOL.
I have also used bagged slaw to toss into a salad to give it texture and color.
I love the idea of the parm not being shredded.
