What, I haven't had corn yet this summer! I saw this recipe, and it has some of my favorite flavors. My usual go to with corn is just corn on the cob. Sometimes I do make black bean corn salad etc ..... Just thought I would post .... Fresh Corn Salad www.twopeasandtheirpod.com/fresh-corn-salad/ "This easy corn salad is made with fresh sweet corn, tomatoes, avocado, onion, and cilantro." Any go to's using summer corn?

Those are my two favorite ways, too! But I always try to sneak in a new recipe or two during the season. Here are two I liked in past years.
Corn Fritters (The lime and cilantro make them different. I used my cast iron with some oil--more sauteed/shallow fried.)

I'm currently back in braces (in my 50s. Yay.) so on the cob is off-limits for me, and boy do I miss it. Hopefully by next summer. I have a salsa that uses fresh corn that we love--one of my friends calls it Cowboy Crack because of how addictive it is (serve with corn or tortilla chips) COWBOY CAVIAR2 Tbl red wine vinegar 1 can whole kernel corn, drained - 2-3 ears fresh corn, cut off the cob 1 ½ Tbl salad oil 2/3 cup chopped green onions 1 tsp Tabasco ½ - ¾ bunch cilantro, chopped 1 Tbl chopped garlic 3 or 4 roma tomatoes, chopped 1 avocado, chopped salt and pepper to taste 1 can black-eyed peas or black beans, drained Combine first 4 ingredients (vinegar thru garlic). Add remaining ingredients except avocado and mix well. Add avocado just before serving. Chill. Can be made several hours ahead. Or we also love this pie from Smitten Kitchen. I had braces for the first time in my 50's. I got sore for a day when adjusted but I ate everything, including corn on the cob. (I don't like sticky candy. would have avoided that) I ate everything, a little more carefully but had zero problems. worst case is cutting it off the cob. still good. braces were well worth it, I had them for 3.5 years. GOOD LUCK!
