I am so proud of all this pandemic cooking!
Excellent
7/26 Lemon-Rhubarb Olive-Oil Bundt Cake (MSL 8/20) Used blueberries and turbinado to dust. SO good. Excellent crumb, slightly crunchy crust.
Make Again
7/30 Green Bean and Tofu Stir-Fry (MW Living 5&6/20) Excellent flavor—loved lime. Used chicken and red onion. Also, no fresh ginger so threw in ½ tsp dried.
7/19 Soy-Ginger Pulled Pork with Tangy Sesame Slaw (MW Living 5&6/20) Easy, different, good. Served over rice.
7/5 Vegetarian Maple Baked Beans (One Thousand Vegan Recipes/Catbatty) Very good. Liked amount of beans to sauce and baked up nicely.
Good
7/30 Blueberry Cornbread (Homesick Texan) It was good, but I wanted it to be better. A tad sweeter, a tad drier (dust blueberries with flour?), lime zest did not come through at all.
7/27 Chocolate Pudding with Espresso Whipped Cream (BA 11/08) Used TJ’s 72%, 2% milk, powdered sugar in whipped cream—just enough for 4 servings. Added a pinch of salt. Easy and tasty.
7/26 Composed Greek Salad (BA 4/03) I feel like I didn’t try this! It was a good salad?
7/26 Spiced Lamb Burgers (FC J/J 12) I felt like this was muted—just needed more salt all around?
7/26 Best Hummus (cookieandkate/lantana) Good, but did I overcook the overcooked chickpeas? And needed to blend a bit longer? Tasty balance though.
7/19 Chocolate Chip Oatmeal Cookies (KA) Really flat, but still chewy and tasty. Used less chips. Oatmeal mostly disappeared.
7/15 Philly Cheesesteak Stuffed Peppers (dinneratthezoo) Tasty—didn’t have all the cheese it called for. Peppers took 25 min. Would be good on bread (hahahaha)
7/14 Mackinac Island Blueberry Muffins (CC Aug/Sep 17) A big bakery muffin. Love the topping and it stays with the butter. A bit tough—I was about 1oz sc short and maybe stirred too much. Also, use papers!
7/13 Korean Beef Zucchini Noodles (damndelicious.net) Good, make again as just a regular stir-fry without spiralizing. And/Or mix in noodles, other veg.
7/8 Taiwanese Basil Chicken (LHJ 9/13) This was OK, but not a lot of flavor.
7/5 Schrafft’s Butterscotch Cookies (KA Baking Sheet Summer 06) Better shape and texture when I did not press down. Subtle butterscotch/nut taste. Will try as ice cream sandwiches.
7/2 Lemon-Poppy Seed Scones (BA 3/02) Good, but I overworked the dough a bit. Should have been higher.
OK
