brand new at cheese. I fell in love with french brie! any cheese suggestions

SOOOOOOOOOOOOOOOOOOOOOOOO much cheese in the world! Where are you located and how well is your area stocked? There are several websites that talk about cheese and how to make a cheese-board to experience different textures and styles. Do you like funky cheese? THen limburger or Brick are great. Do you like soft cheese (yes, since you said you liked brie)...did you have triple fat or double fat? You could try the other and add camembert to that. Lots of other soft rind style cheeses like that around. If you like hard cheeses, there are aged cheddars of various age that you may find interesting. Have you cooked with cheese? Parmesan is great as an eating cheese too...nutty, hard cheese that melts OK. Young Monterrey Jack compared to a hard, aged Jack are nothing alike and worth experimenting. You can also try cheese blends. If I had unlimited money (sadly, I don't)I could live on La Tur (sheep, cow and goat blend).

I just bought a great cheese at aldi's. It's called Borgonzola. Tasty stuff! Tangy....blue cheesy, Brie-like cheese.
