Now why didn’t you post this earlier? I had broccoli to use up so I just steamed it an had it for lunch. While it was good, this looks much better.

I made grilled cheese sandwiches with authentic medium Brick cheese from WI (a gift from our former neighbor in virtual support of ailing cats). Droooooooooooool. I baked some rye bread this afternoon and can see this as a great canvas for more melted cheese!!!

I’m going to see if I can find it around here at a cheese shop.

Texan here -- can only imagine brick cheese, but where was the broccoli melts when we had an overload from our CSA? I was so desperate for some new ideas. I will save that (among others) so that doesn't happen again. I should visit more often and read more when I do. My dad was 100% Dutch heritage, so I claim cheese and chocolate as birth rights, essential to my well being. Doesn't hurt that ever cuisine seems to have its own version of melted goodness.
