Another month for the memory books. Still cooking--old favorites, recipes to use up what I have around, and new stuff. I hope you are all well.

4/28 Pork Chops Scarpariello (Gourmet 8/08) Why was this SO good? Made changes: fresh peppers, jalapeno, thyme. Must be the broth/wine/fat combo? Anyway, delicious.
4/26 Carrot Cake Pancakes (SK) I made these as waffles and they were really good. The frosting was perfect. Alton Brown says the different between pancakes and waffles is fat and sugar so I added 2 more tbsp brown sugar and, instead of cooking the pancakes in the 3 tbsp butter, melted it and added it to the batter. I also used mascarpone from the freezer instead of cc. 4/18 Blueberry Baked Oatmeal (cookieandkate.com) More of a bake than my previous. Did adapt: one diced apple and a scattering of cranberries, 2 egg whites 1 whole egg. Didn’t like cranberries. Forgot pecans!
4/12 Lamb Chops and Mashed Potatoes with Peas & Herbs (RR 4/16) Really a lovely spring meal. The lack of real measurements was a little annoying. Used chives, thyme, parsley for herbs.
4/12 Maple-Balsamic Roasted Carrots (CC) Tasty. Why do they call them roasted?
4/12 Lemon-Cream Sandwich Cookies (BA 1/09) Tasty, but kind of a pain. And for all the care that you put into the cookies and all the lemon, just light lemon taste until combined with cream.
4/8 Turkey Tetrazzini ATK Good—seems all their casseroles are similar. A bit of lemon juice, white sauce. Froze half—we’ll see!

4/23 Cajun Sweet Potato Fries (Minimalist Baker) Good, but timing or my cutting is off. Done in 15 minutes, but not really crisp. Need to cut a little bigger than regualr fries.

April was a good month for new recipes. I've been fascinated with Milk Street Fast and Slow and Kevin Belton's New Orleans Celebrations and cooking out of them nearly exclusively. One disappointment with Gimme Some Oven's pie crust. Recommended Kimchi Soup My Korean Blog Breakfast Farro and dried Apricots Milk Street Fast and Slow Pastalaya Kevin Belton New Orleans Celebrations Chicken and Waffles Kevin Belton New Orleans Celebrations Coconut Rice with Beans and Scallions Milk Street Fast and Slow Lentil and Bulger with Caramelized Onions Milk Street Fast and Slow Hoisin-Glazed Baby Back Ribs Milk Street Fast and Slow Ribollita Soup Eating Well Soups Chicken Tagine Milk Street Fast and Slow Steel cut oats with dried apples Milk Street Fast and Slow Okay, probably won't repeat Chicago Thin Crust PIzza Cooks Country pasta e fagioli Cooks Illustrated My dried beans weren't the best... Varaile-I just got that Milk Street Cookbook so it's good to hear the recipes are tasty. The book looks nice but I have not cooked anything from it yet. I did cook A LOT this month as I am sure most of us did since take out is not my thing and eating out is not an option. But to be honest, I did so much, I just can't recall it all. I'll try to dig up a few standouts from the recesses of my brain!!! I will be reading thru the posts later -- so fun to read what people are cooking and always a great source of ideas. Here's a few off the top of my head. Favorite of the month --- Hummus (lantana suggested, a Cookie & Kate recipe). I think cooking the canned beans etc was key. I was in the mood for some comfort food and haven't had meat in a few years, other than the occasional CL Salsa chili, and I was so in the mood. And, made some garlic bread too. Just basic recipe. A simple and quick Spinach & Chickpea dish with tomatoes, raisins etc (Simply Vegan), good over rice, potato or just as is.

This was a surprise fun hit for me - so easy to make bite-sized treat. The brownies have many crisp edges and chewy centers. The best part is they freeze so well (but, not hard as a rock) and can go directly from the freezer to your mouth! Yankee's(Magazine) Crisp-Chewy Waffle Iron Brownies Recipe Total time: 40 minutes; hands-on time: 30 minutes 1/2 cup salted butter, at room temperature 1 ¼ cups granulated sugar 3 squares melted unsweetened (baking) chocolate 1 teaspoon vanilla extract 2 large eggs, beaten 1 1/3 cups all-purpose flour ½ teaspoon baking powder ½ teaspoon salt Vegetable oil for waffle iron Preheat your waffle iron.(used a Belgium waffle maker) In the bowl of a standing mixer, cream butter and sugar until fluffy. Add melted chocolate and vanilla and stir. Add eggs, one at a time, stirring well after each. In a separate bowl, whisk together flour, baking powder and salt. Add dry ingredients to chocolate mixture and stir just until evenly combined. When waffle iron is ready, spray or brush with neutral vegetable oil, such as canola. Drop a heaping tablespoonful of batter into the center of each grid on your iron. Close the lid and cook until the brownies are crisp and dry on the outside, 4 to 6 minutes
(mine was 2-3 minutes). Open the waffle iron and let brownies sit for 1 to 2 minutes (1 min), until firm enough to remove (don't skip this step or they will crumble). Transfer to a plate and sprinkle with powdered sugar. Repeat with remaining batter. Yield: 10 to 12 brownies. (I had many more than 12)

Finally getting around to making my list. Will make again:Thai Red Curry Noodle Soup: damndelicious.net/2018/04/18/thai-red-curry-noodle-soup/ I cooked the rice noodles separately and added them to the bowl before serving. I always do this for noodles and grains in soups. We loved this soup and it is so simple. I make this a lot! We don't care for rice noodles so I use a package of ramen noodles but discard the flavoring pack that comes with it. It works great with tofu too. The only thing I've made from this site that won't be a repeater is the "Butter Cauliflower Bowls" which I just made Wednesday night. We had the leftovers last night and actually thought it was better. Overall the dish wasn't bad, but it just wasn't for us. I'll have to try the pot sticker recipe - I love pot stickers but DH not so much, but he'll eat what I cook  .

Mcgee, I do that with ramen noodles all the time. On last my trip to Whole Foods (pre Stay at Home orders), I found packages of ramen noodle nests with no seasoning package. I'll be buying those again when it is safer to make extra grocery trips.

I've tried a few new recipes recently. This one has already been repeated. I only use one can of coconut milk and don't bother with the serving toppings.
I've been making French boules for years, but recently tried the no knead version after I bought a Staub Dutch oven. OMG, can't believe how easy it is to make the same delicious bread! Here's today's:
