I bought some frozen artichoke hearts from TJ's for an appetizer before OH went into shelter-in-place. Now as I assess my freezer situation, I am wondering if anyone has any recipes that I could use them in. Not an appetizer since it is just me. A casserole? Not even sure.

In a sauce over pasta; cut into bite sized pieces in a frittata; Roasted/cooked and tossed into a salad,

Just made Saucy Artichokes and Beans (Epicurious). I made a few modifications of my own to their recipe but it was really good. I used dried gigante beans which made it a nice hearty vegetarian dinner with some homemade bread and salad. I used frozen artichokes, not canned and I did not have fresh tomato. I used a can of diced tomatoes. Added some fresh herbs at end. I also like Giada's Spezzatino which is a soup/stew with artichokes, chicken, and white beans.
