I'm a big fan of hummus and typically have a few containers of it in my fridge at all times. I've made homemade hummus a few times and it was usually just ok. I tried a new recipe a few days back, and it was missing something in the flavor dept and texture not as smooth as I liked (probably because was a little short of tahini and/or didn't mix enough). I typically buy the plain hummus.
Yesterday I bought the last jar of tahini at WF. And I have lemons, garlic, cumin and lots of canned chickpeas .....
Any favorites.

Yes, I love this one from the Cookie and Kate blog cookieandkate.com/best-hummus-recipe/. It is not hard to make but has a few extra steps, like boiling the canned chickpeas before making the hummus. It has lots of tahini and is pale and smooth like good soft-serve ice cream. The whole post is interesting in why all the little steps are important to the final result. Lantana

I like SK's Ethereally Smooth Hummus. Peeling the chickpeas really does mprove the texture. My notes: True! Very smooth—I added about 2 tbsp more water and a little bit of oo to really get the consistency I wanted.
And I liked Molly Yeh's Hummus. But it starts from dried. A recipe for your file! My notes: Very, very smooth and thick, but not heavy.
And Ina's Hummus. Though I made it so long ago I cannot find my notes!

Wallycat-Milk street's hummus is very good, too! As is Cook's Illustrated. Both start from dried. In a pinch, if you are out of tahini, swap in a bit of almond butter or even peanut butter for a slightly different tasting but still very good hummus like spread. I am making a roasted beet hummus this weekend for DD. I really don't like beets but I have some to use and DD requested it. Who knows....in hummus I might like it!!

Thanks everyone! I can't wait to try some new recipes. I have some great pita, might make one of my favorites (Israeli salad -- tomatoes, cuc, parsley...) so let the taste testing begin.

Lantana Yesterday I made the first recipe, posted by lantana. Hands down had the best texture compared to any hummus I've made in the past. Really smooth! I might have been a bit light with the seasoning (than mentioned) --- so might up that a bit/tweak next/add a bit more lemon. Thanks so much lantana!

And I haven't yet tried the other recipes. Lantana, it was so good that I made another batch. I have lots of garbanzo beans and more tahini is on my shopping list. Thx again.
