I made this last night, so good! Sweet Potato Chickpea Buddha Bowl, "Flavorful, filling, 30-minute Buddha Bowl with roasted sweet potatoes, onion, kale, crispy chickpeas, and an AMAZING tahini-maple sauce." I did make a few subs.... used broccoli instead of broccolini, added some spinach, omitted kale, added a few other ingredients ...... Not surprisingly, most of my recipes this month have been sweet!
I made SK's Chocolate Peanut Butter Cup Cookies and thought I would love them and they were good, but I didn't LOVE them. Maybe if they were smaller? I did 1oz dough and 10g filling and got 23 cookies.
I made Food52's New-Fashioned Chocolate Chip Cookies which use all tahini and no butter. These were good, better than I expected. The baking time is very finicky though--10 minutes was good. Used 6oz chips only and could increase a smidge more or add nuts.
And then there were BA's Best Peanut Butter Cookies. But they were good, not best. Again, I think the baking time had a lot to do with which batch turned out better. But, with some strawberry jam sandwiched between two cookies: yum. I actually ended up finishing these off because of that whereas I probably would have just tossed the last couple of cookies without it!
For balance, I made a salad for supper club: Cape Cod Chopped Salad. Quite good and easy. TJ's didn't have straight arugula so I used a combo: arugula, lettuce, spinach. And I am not a huge fan of bleu cheese (though it would be good here!) so I used feta mostly because I know I'll use up the rest of it!
As for regular feeding myself cooking? *sigh* It is the depths of January, right? I recently read that the consistent, everyday ways we take care of ourselves (including cooking!) are small acts of self-respect. This rings true to me, but I still haven't made a menu plan!

Erin -- Great list, thanks for posting. I just copied down the chopped salad, sounds delicious. I hope to try it soon. Not saying the other recipes don't sound good, but since I'm doing some menu planning, not sure I should have those for dinner. : )

erin --- Those cookies are practically on the super food list. swedishcook --- Sounds delicious. Thanks for posting you two! Tonight I had Giadas Lemon Chicken Soup with Spaghetti. I had some lemons, a a parm rind etc to use up and then remembered this soup. I did make a few changes based on what I had/tossed in. www.foodnetwork.com/recipes/giada-de-laurentiis/lemon-chicken-soup-with-spaghetti-recipe-194858I might make spicy three bean and corn chili that KarenW posted awhile back (it is a Joanne Chang recipe of Flour Bakery fame). I usually halve recipe, sub the pinto beans,use canned beans, and few other changes A great recipe, big thanks to Karenw for mentioning. One of my favorites.

I made French Toast tonight. DH and I have been married almost 30 years and I don’t think I’ve ever made regular old French Toast for us before and it was delish and a nice change of pace.

I have a 1 1/2 pound tube of ground venison in the freezer. I made a meatloaf with another package, but looking for something different for this last tube.I

I used trimmings that were 1/4 to 1/2" cuts but I can't imagine the ground would not work. I have actually pulsed trimmings in the food processor to make ground for various other recipes.

mcgee --- French toast, one of my favorites! I have some bread in the freezer that would make great french toast. Thanks for the idea. I haven't had it in a long time. wc -- Hope you enjoyed.
