If you ever come across amaranth leaves in your farm share or at a farm stand, GO FOR IT! Just think of a wonderful, mild spinach and you have the idea. Raw in salads, steamed or like I did last night, wilted in olive oil with sliced garlic. Better than spinach any day of the week. They are just coming in here in South Texas (yes, it still mid-90's!) so I'm looking forward to more over the next month.
