Total comfort food. The recipe has just a few ingredients, and they are mostly all pantry ingredients (other than the garlic, and I topped with parm). And it is just a few dollars (if that!). A great recipe to have hand when you think you have nothing on hand --- but have some garlic cloves, grab a can of beans, some small pasta, tomato paste, some olive oil, red pepper flakes, oh is that parm in the back of the fridge etc. Throw together a salad perhaps or ..... and dinner is done. I made this a couple of times and again this week. Who has time for that, ha, too busy eating. It says it serves 2-3 (more like 2 depending on portion size/sides). I did top it with some parm like in the picture. This time it was a bit blander (but so good) --- I skimped on the garlic a bit since ran out and maybe use better tomato paste. The recipe mentioned that she sometimes would toss the parm rind in the pot, that would be great too,
