I went a bit overboard buying broccoli and I wanted to do something other than my usual roasted broccoli. I was thinking of a broccoli salad. I saw this on BudgetBytes. www.budgetbytes.com/honey-mustard-broccoli-salad/Anyone have a favorite broccoli salad or easy side? Thx.

Yum! Good idea for a thread! Side: we like broccoli steamed (high pressure, Instant Pot, 2 minutes), in bowl drizzle with soy sauce, top with Sirracha drops. Sometimes shredded cheddar sprinkled on top. Often: dollop of sour cream. Doesn't probably sound great...but it is actually groan worthy. That's what I usually do.

Found this on Cooking Light in 2002 and have made it numerous times. At a recent family gathering, one person said they didn't like broccoli but did like this salad. Richard www.myrecipes.com/recipe/broccoli-salad-0Ingredients 4 cups small broccoli florets (about 1 1/2 pounds) 1 1/2 cups seedless green grapes, halved 1 cup chopped celery 1 cup raisins 1/4 cup salted sunflower seed kernels 1/3 cup light mayonnaise 1/4 cup plain fat-free yogurt 3 tablespoons sugar 1 tablespoon white vinegar Combine the first 5 ingredients in a large bowl. Combine mayonnaise and remaining ingredients, stirring with a whisk. Pour dressing over broccoli mixture, and toss well. Chill for 1 hour.

One of my fave fast suppers is a baked potato topped with steamed broccoli--butter, salt, and pepper--and I feel fed and it was easy.
This is my fave broccoli salad. Love the cranberries in it. Notes are hers and I am sure I used regular sour cream or yogurt (not ff).
Broccoli Bacon Picnic Salad Eating Well, Summer 2009 6 scant cups CLBB/doggerham 1 clove garlic, minced 1/4 cup low-fat mayonnaise 1/4 cup reduced-fat sour cream (have subbed ff yogurt) 2 teaspoons cider vinegar (I used more) 1 teaspoon sugar 4 cups finely chopped broccoli crowns 1 8-ounce can sliced water chestnuts, rinsed and chopped 3 slices cooked bacon, crumbled 3 tablespoons dried cranberries Freshly ground pepper to taste Whisk garlic, mayonnaise, sour cream, vinegar and sugar in a large bowl. Add broccoli, water chestnuts, bacon, cranberries and pepper; stir to coat with the dressing.

I love a bacon, mayo, lettuce, diced onion, cauliflower, shredded cheese recipe (posted here many times) and broccoli would easily sub for the cauli.
