A good way to use up the veggies in the fridge. Leftovers for lunch today. Very few ingredients .. quinoa, spinach, cuc, avocado, lemon, bit of honey or maple, garlic and.... ........ I added a few other veggies that I had on hand. www.twopeasandtheirpod.com/easy-quinoa-salad/

I want to add an extra thank you for making me aware of golden balsamic vinegar A bottle of this has now been added to my pantry. It will solve the problem of my "regular" balsamic vinegar turning some dishes (like orzo salad) too dark.

Your so welcome! I thought it was really good. I usually use regular balsamic in salads (and have the same color issue but then I just throw more feta (if using) and just deal with it. Or sometimes sub another vinegar if I have some on hand. I have picked up white balsamic at Trader Joes' (not sure if they still have) or other markets for this type of recipe too.
