Starting this a few days early since leaving town tomorrow so no more cooking this month:
Excellent:
-Whole grain onion-rosemary bialys-used my tried and true recipe but swapped out some of the high gluten/bread flour for a multigrain mix and added about 2 T. chopped fresh rosemary
-Peanut butter banana granola-no oil and good flavor. Mild banana and peanut flavor but nice balance even after I messed up the proportions!
-Herby Everything cheese swirl buns-Half Baked Harvest blog. Also swapped out some of the white flour for whole grain. Only thing I might do different next time is alter the filling. The pesto is strong so the everything flavor gets lost so depending on which flavor I want more prominent, I would alter the filling/topping but excellent roll with lots of different possibilities
-Grilled Vegetable Lasagna-combined ideas from a few recipes (Ina and Inspired taste) plus a few twists of my own and turned out excellent.
-Basil Parmesan Salmon-Skinny taste air fryer recipe. Excellent taste. I made in air fryer toaster (Breville) but I think it would be just fine baked, too
Very Good:
-Creamy Eggplant Dip with zata’ar-just needed a bit of extra salt
-Lemony Chicken Packets with Summer Vegetables-easy and light with lots of possibilities. My chicken was a bit bland but that was not the recipes fault. just bought an off brand of chicken.
-Baby Potato Salad with Corn Vinaigrette-Fine Cooking-a nice change from the usual potato salad or corn on cob side.
-Hearty Chicken Vegetable Soup
-Baked Peanut Butter Banana Oatmeal Cups-my perfect breakfast!!!
-Ranch Dressing mix-uses dried buttermilk powder, then you mix with yogurt and mayo
-Sicilian Fish Stew
-Cook's Ill. used homemade fish stock
-White Bean Artichoke Bacon Skillet with Escarole-Rachel Ray-added more liquid to make it more soup-like, a bit of tomato, and dialed back on the bacon but that is just my preference. Tasty
-Yogurt Bark-me
-Rosemary multigrain bagels
Tried and True recipes:
-Everything Pletzel Focaccia
-Peanut Butter Meringues aka clouds-Alice Medrich-used milk chocolate and peanut butter chips and some chopped peanuts
-Eggplant Caponata-Cook's Ill.
