Does anyone use this in any baked goods other than yeast breads? I have EmElles' yeast/quick bread cookbook and she uses this in all of her yeast recipes. I was wondering if it can be used in goods such as quick breads, biscuits, and cookies, as examples. Comments would be greatly appreciated. Many Tks, JamGirl

I've only seen it used with yeast breads. My experience is with bagel making (a long time ago).

Thank you for your reply - I haven't tried it yet myself as I am waiting for a supply to be delivered to my home. I purchased it from Amazon.ca - I'm anxious to try it. JamGirl

I use non-diastatic milk powder in my bagels but you can use either non-diastatic or diastatic in pancakes as a sweetener and to give them a slightly malty taste. Also good as a mild sweetener in English muffin recipes.

Further to my query about DMP - I have since gone to Hoosier Hills actual web site and contacted them with this question (as it was their product that I had purchased from Amazon.ca) - Can their DMP be used in regular type baking, such as cakes, cookies, biscuits, quick breads, etc., and the rep replied that indeed, one can use this in regular baking as well. I "quote" her response in general "I confirm that our Diastatic Malt Powder can be used in making regular recipes for cakes, cookies, quick breads, biscuits, etc. It acts as a sweetener, improves loaf volume, texture and overall flavour."
So I am now eager to try a few recipes, esp from Em Elless' yeast/quick bread Instant Pot cookbook. Kindest Rgrds to all, JamGirl
