I'll be interested to try this. I love scalloped potatoes but have never made them in a way I would consider fully successful. Just this past Easter I did Mark Bittman's recipe and they were super watery--of course, I used a blend of 2% milk and half & half - I suspect if I'd used all heavy cream, they would have been better consistency (and I'd probably need a cardiologist). I like this this uses a combination of heavy cream and chicken broth.
