That looks great -- thanks so much. Is there any brand of refried beans that you suggest? Or just go with whatever they have at the supermarket? I've never bought/had before which I even find strange given how often I eat beans/like Tex Mex food. I'm not even sure what is typically in refried beans. Google is next.
Applecrisp-I usually buy Trader Joe's re-fried pinto beans or black beans. If you don't have that option near you, I am told taco bell makes decent refried beans which are sold at the grocery stores. Whole Foods 365 brand is also good (and more affordable relative to most of their stuff!). In a pinch, just take a can of black or pinto type beans and mash them up good, maybe throw in a few extra taco/Mexican seasonings if you like and/or some canned chiles and call it a day (and save yourself a trip to the store). The refried beans in her recipe are really there to add extra body to the dish and the mashed up beans would do the trick.

Thanks Karen! I live right near a TJ's and WF so I can definitely do that. I also thought about just whirling some black beans in the food processor with some spices, so great to read that you suggested that in a pinch.
I can't wait to try the recipe. Tonight I'm having that black bean salsa chili recipe (I had some in the freezer) that you suggested years back. It is one of my all time favorites, so once again, big thanks. I've made that recipe soooo many times.
