Cooking Light's All-American Chili - my go to recipe that everybody enjoys, (I use ground turkey, not beef)

Thanks Keba. I have made that one before and totally forgot about it. The rain held off so I actually went out and about so no chili today. I’m making enchiladas instead but always appreciate chili recipes so keep ‘em coming.

My favorite for white is Cook's Illustrated. Both their crock pot chili recipe and a different stove top recipe of theirs are good but I prefer the latter. They also have a good red chili but my favorite for red is still C.L. reader recipe for black bean salsa chili. I know that I have posted it here before but I can probably find it, if you want it/can't locate it.

There's always that CL recipe that everyone raved about for years, I think it was called Smokey Black Bean Chili. EDITED TO ADD: name of soup was Smokey Black Bean and Vegetable Soup. I have it in my MC files if anybody wants it.

I have 2 Go-To Chili recipes. One is for a beef, red Chili and this is green Chili. We are so pleased with both that we don't search for a new Chili recipe.
White Bean Chicken Chili Verde - (slow cooker)
1 large onion, chopped 1 tablespoon olive oil 3 garlic cloves, minced 1 1/2 pounds chicken breasts, cubed 2 cans white beans, rinsed and drained 2 cans garbanzo beans, rinsed and drained 3 cups chicken broth 1 cup salsa verde 2 teaspoons cumin 1 1/2 teaspoons salt 1/4 teaspoon pepper 1 teaspoon garlic powder 1 "glug" Sriracha - optional 1 1/2 tablespoons cornstarch 3 tablespoons water
Place the olive oil and onion in the slow cooker, add the chicken, spices, beans and remaining ingredients. Cook 4 hours on High, or 6-8 hours on Low. Just before serving, combine the cornstarch and water. Drizzle into the slow cooker and stir. Cook a few minutes to thicken. Serve, topped with avocado and cilantro. Serves 6-8. (I probably make this on the stove top more often than in the slow cooker).

My go-to beef is the All-American, too. I use beef broth instead of wine. I actually mostly turn to this WW turkey chili recipe though. It is spicy and light and bright. But, for special chili occasions , I love this one.
Real Texas Chili (Craig Claiborne) 2 tbsp. oil 3 lbs. boneless beef chuck roast cut into 1 inch cubes 3 cloves garlic, finely chopped 4-6 tbsp. chili powder 3 tbsp. flour 2 tsp. cumin 1 tbsp. oregano 2 cans beef broth (13 3/4 oz each) 1 tsp. salt 1/4 tsp. pepper Heat oil in a large heavy pan over medium, heat. Add beef and stir until it changes color but does not brown. Reduce heat to low. Stir in garlic. Combine chili powder, flour, and cumin in a small cup. Sprinkle over meat. Crumble oregano over meat. Add 1 1/2 cans beef broth and salt and pepper to kettle. Stir until well-blended. Bring to a boil over medium heat, stirring occasionally. Reduce heat to low. Partially cover and simmer for 1 1/2 hours. Add rest of broth. Simmer an additional 30 minutes or until meat is falling apart. Cool. Cover. Refrigerate overnight to develop flavors. Reheat slowly. Serve with any and all garnishes--sour cream, cheese, onions, green peppers, avocado.

I made the Black Bean Salsa Chili and it was delicious. Both DH and I thought it was probably the best chili we've ever had so thank you Karen for posting it! DH doesn't like turkey so I made it ground beef and I even made the cilantro lime sour cream for it. Thanks again!
