1 boneless skinless chicken breast salt and freshly ground pepper 1/4 cup tahini, or peanut butter 1/4 cup rice wine vinegar 2 1/2 tablespoons soy sauce 1 teaspoon sugar 1 teaspoon ginger, minced 1 tablespoon sesame oil 1 tablespoon sambal oelek 2 cups cabbage, shredded 1 cup water 16 ounces Chinese noodles 4 green onions, thinly sliced 1/2 cup roasted peanuts
Poach chicken about 15 minutes, cool and shred. Reserve poaching liquid in pan. Whisk the tahini, vinegar, soy sauce, sugar, ginger, sesame oil, sambal oelek until combined. Add water to the poaching liquid, bring to a boil over high heat. Add the noodles cook according to the package directions. Drain and rinse the noodles in cold water. Add noodles, chicken and cabbage to the dressing, mix to coat. Sprinkle with green onions and peanuts. Serves 4.
