Hi Brenda, Yes, you're right -- I've tried a bunch of recipes from that cookbook and I know Sallyt has as well. One of my favorites is the Roasted Crisp-Topped Eggplant with Chickpeas that I tried after Karenw mentioned it in an thread on the old CLBB (thanks Karen, this has become a favorite recipe of mine!). Note- I do cut back on the oil. It is like eggplant parm minus the mozzarella cheese, in fact, only parm in the recipe. Sallyt wrote a post a few days ago recapping some of the recipes that we have both tried, and here's a cut and paste of that post (it is on the food part of this forum).....
