I bought a package of sweet potato ravioli at Costco. they are filled with a light cheese filling. the package suggested a browned butter, lemon, sage sauce. I tried it and did not like it. I am at loss what to put on them and since its a Costco package, you know there are a lot of them. tomato sauce does not sound right. I don't like alfredo and it doesn't sound like it would add much flavor. they need something. ideas?? I was thinking maybe chimichurri sauce....these don't have much flavor themselves. slightly sweet.
Hmmm I guess no one else can think of anything either? no wonder I'm having trouble coming up with something.

I googled it and saw a browned butter and walnut sauce or an Asiago sauce...sounded sort of good...I very seldom buy ravioli so I am not a good first hand source...

Chimichurri sauce sounds like a good choice to me. Or a cilantro pesto. I think I would want some spiciness to temper the sweetness. Or maybe a kale pesto? Or a florentine sauce similar to this: www.ciaoitalia.com/seasons/recipes/florence-style-spinach-in-white-sauce with either spinach or kale. I'd be tempted to throw some spicy sausage or some crushed red pepper in there too.

well maybe I'm on the right track. the browned butter sauce I tried failed. whole lot of butter, no flavor on the ravioli. it had sage and lemon, but was not useful.
I have a chimichurri that uses parsley and one with cilantro so that is the next try. (I don't eat meat) I was afraid a white sauce would not have enough flavor but that will be door #2. I have pesto on hand too but that somehow didn't sound right either. I think I made this mistake before with a slightly sweet ravioli type pasta and never found anything that enhanced it. Thanks for the thoughts.
