I had some grape tomatoes in the fridge (for some reason I store other tomatoes on the counter, but grape in the fridge, I think they last longer that way but I could be so wrong) that needed to be used up, and remembered coming across this recipe that was saved on my computer ..... Quinoa Salad with Roasted Tomatoes and Feta (from dinneralovestory). Really good, super flexible since you can sub the grain, and and easy so I thought I would post. They suggested "you can put these over pasta with olive oil and cheese, on bruschetta with garlic and basil, on top of fish or chicken" too. I've roasted tomatoes a few times, but I think I just had as a side as is or added to pasta. I just went with a grain salad. www.dinneralovestory.com/quinoa-roasted-tomatoes/

When I need to resurrect grape tomatoes that are a tad past their prime I bake Focaccia and halve them for a Grape Tomato and Rosemary Topping. Baking concentrates the sweetness of the ripe tomatoes, making them bright and fresh again.

When I need to resurrect grape tomatoes that are a tad past their prime I bake Focaccia and halve them for a Grape Tomato and Rosemary Topping. Baking concentrates the sweetness of the ripe tomatoes, making them bright and fresh again. Emma -- That sounds really good and another great way to use up some grape tomatoes. I've never baked bread -- it has been on my to try list for way too long. Thx for the great idea.

Applecrisp, I like:
Spinach & Grape Tomatoes -
1/2-1 tablespoon butter 1/2 bag spinach 6-7 grape tomatoes
Melt the butter, fill the pan with spinach. Cover and cook over lowest heat until the spinach is wilted - but not soggy, 4-5 minutes. Add the tomatoes, heat about 1 minute, until hot, but not bursting. One serving.
Serve as a vegetable side dish, or over couscous or spaghetti. Can be topped with a soft-poached egg. The colors are beautiful and it is great served with steak, instead of creamed spinach.

I like to halve them, toss with EVOO, and combine with capers and/or olives. Mound on top of fish filets (cod, tilapia) and bake until done. The tomatoes release their sweet juices to season and moisten the fish. You get something similar if used to top boneless, skinless chicken breasts but the tomatoes "melt" more because of the longer cooking time. If I'm using on chicken I add some oregano or rosemary.

think recipe soup & stew is referring to is tilapia Veracruz , could use any mild fish. cherry tomatoes. golden raisins, capers I think? very good and would not matter if tomatoes past prime.

I may have suggested this one before but we discovered as is when the boys were not home. When the boys are eating with us, we add crumbled turkey Italian sausage (precooked) at the end. We keep it in the freezer for pizza, but it helps bulk this one up for young male appetites.
