OK, so this might be my new favorite brownie recipe. And they are vegan! These are pretty much the perfect texture--not too fudgey, nice crackly top. My regular recipe is a cakey brownie, but these might change my allegiance. I made half a recipe in an 8x8. Used vegan mini chips, Baker's unsweetened chocolate, and King Arthur Bensdorp dutch-process cocoa. I had to cut while still slightly warm and it was a bit hard. Also, these stick to the foil, but I was able to use a server to not beat them up too much. Now I am wishing that I did not give all but one away!

erin ---- come on, like I'm not going to save that ATK recipe after that post. Saved. I never thought of going vegan, but maybe just for dessert! Actually sounds good regardless and great if I need to bake for a vegan friend.

I am as surprised as you are, applecrisp. Made them for a friend who is dairy-free--she was celebrating her birthday--or I probably never would have made them. Glad I did. Actually going to do another half batch to give to a new neighbor who moved in this weekend (and save at least one piece for myself, too!).

A friend of mine made me a pan of Zucchini Brownies this summer after I gave her a bunch of zucchini. They were also vegan- and kind of a fudgy-cakey texture, but dang if they weren't some of the best brownies I'd ever had.
I definitely will have to try these because zucchini season is gone and I've been thinking about those brownies...

erin -- Forgot to mention, the last brownies I made were black bean brownies so these are just oh so ordinary. Ha. Just kidding, I just forwarded the recipe to a friend that is vegan that loves to bake so thx again. Actually the black bean brownies (no flour) were very good and I couldn't really taste the black beans at all. I was intrigued in trying them when I saw sallyt suggest them awhile ago. And just think of the protein.
It made me think that the Wacky Cake recipe would also be vegan. Hmm, have to remember that.

mrswaz --- I've never had zucchini brownies before. I am not happy that the season is ending for all the summer produce. It definitely feels fall out --- having soup for dinner.

I need to bake for folks who are vegan and/or GF at times, so I try to have some good recipes in go-to file. If those of us ho don't need the special recipe don't like them, they don't get repeated. I get more requests for GF than vegan, but like to have both. GF and vegan is the toughest, but I think I will try these with King Arthur's measure for measure GF flour and see how they work. Would be great to add another option that fits both.
If you have many requests for GF baking or special diet baking in general, I do recommend the Measure for Measure flour (made some of the cookies from Momofuku Milk Bar book with it -- my guys ate them without noticing any difference) and Let Them Eat Cake by Gesine Bullock Prado. Every recipe in that book has variations when needed to be made vegan, GF or a healthier option (lower sugar, more whole grains, etc.).

Julie, it was a skinnytaste.com recipe that Sallyt posted on here (or the old CLBB). www.skinnytaste.com/amazing-flour-less-brownies/ In my notes, I think I followed the changes/tweaks that Sally mentioned (I know I added the vanilla), since in my notes I have this "I added 1/2 t of salt and 1 t of vanilla, and upped the oil to 1 t (from 1/2 t). Black beans are the base, but you can't taste them at all. I highly recommend them!" I haven't seen Sallyt on the boards recently, hope she is good! I was sooo intrigued I had to make the recipe after she reviewed it. Just think of the protein you get while eating dessert. Ha. I won't say it as good as an awesome brownie, but really good if someone can't have flour etc. And come on, what a different use for black beans. Move over black bean soup, making a batch of brownies. Julie --- there are lots of black bean recipes, this is the only one I've tried. Blend really well! And I did use low sodium black bean like the recipe says.

I might try them with flax eggs instead of whole eggs to make them vegan, and then maple sugar instead of the cane to boost the nutrition a little more. Looks like a great recipe and I'm definitely going to make them soon!
