A long time ago in another life I was a semi-regular poster/ lurker on the CLBB (drifted away in 2008ish)...marriage, two kids, a cross country move, and a major job change got in the way. Last year we sold everything and moved to the other side of the world. As we go into winter, I've been craving baked oatmeal. In particular the CLBB cookbook baked oatmeal. My paper copy of the CLBB cookbook is either in storage or donated. My digital copy is either hidden on an external hard drives or lost. I stumbled onto the Great Food Forum in my search for the CLBB...
Would anyone with copy of the old CLBB cookbook be willing to please post the recipe here? I've tried a couple of other recipes and they're just not the same. I'm not sure if it's the recipe that's different or the ingredients or just the climate.

Fantastic! I speak for all of us because I'm sure everyone agrees: we are SO very happy that your search brought you to us!! We've been trying to get the word out that we are here and have been crossing our fingers that people do just exactly what you did!!!!! And now you have me very curious...where are you living now? I know that several of us are looking for that recipe for you. I'm off to do same now!! I hope we find it for you. (Any ideas on who posted it or who even remarked about it...or when...will help us, too. IF you think of any more info, that is.) SO HAPPY TO SEE YOUR POST TODAY!!! We live in a suburb of Wellington NZ - we've been here for a year and will be for at least one more depending on how things go.
I'm not sure who posted the recipe originally - I had my notes on a printed copy from the CLBB cookbook. I'm pretty sure that it's not Joe's since I didn't use almonds or maple syrup.
I'm kicking myself for not putting the cookbook in the kitchen pile, but might have been thinking I could rely on the digital copy and my memory. I also emailed my mom since she gave a lot of my cookbooks a new home and I'll post it if she finds it.

This is the Baked Oatmeal recipe that was often mentioned at old CLBB. Long, LONG, ago, I put this together and saved it to my Mastercook software!!!! (I love my Mastercook!!) I had placed a bunch of the various posters' comments from back then inside the directions area towards the bottom of the recipe. Judging by all the great comments, I think this is the one you are seeking!

Baked Oatmeal
Recipe By :Quaker Oats Serving Size : 8 Preparation Time :0:00 Categories : Breakfast
Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 1/4 cups Quick cooking oats, uncooked or 2 3/4 cups Old Fashioned oats, uncooked 2/3 cup firmly packed brown sugar 3/4 cup raisins or Craisins 1 teaspoon ground cinnamon 1/2 teaspoon salt -- optional 3 1/3 cups skim milk 4 egg whites -- lightly beaten (or 1/2 cup egg substitute) 1 tablespoon vegetable oil 1 tablespoon vanilla fat free milk or nonfat yogurt and fruit -- optional
Heat oven to 350 degrees. Spray 8-inch glass baking dish with cooking spray.
In large bowl, combine oats, sugar, raisins, cinnamon and salt; mix well. In medium bowl, combine milk, egg whites, oil and vanilla; mix well. Add to dry ingredients; ix until well blended. Pour into baking dish.
Bake 55 to 60 minutes or until center is set and firm to the touch. Cool slightly.
Serve topped with milk or yogurt and fruit, if desired. Store leftover oatmeal tightly covered in refrigerator.

Karen - It's kind of cakey, not at all mushy. Think of polenta in a pan to set up to cut in pieces. This is good stuff!!

I made this for the first time two days ago, and it's already gone! I made it the night before and microwaved a serving at a time - delish! And the kids loved it, too.
BTW, I made it without the oil and it turned out great

I made this for breakfast this morning and it was really good. I don't like my oatmeal mushy either, and this was perfect. I used Craisins. I also couldn't remember which kind of oatmeal I had (wasn't in original container), so I compromised and used 2 1/2 cups. It reminds me a lot of a recipe that I got from a B&B once, but that used 1/2 cup of oil! I'm going to have to dig that one up and see what other changes it had in it.

Thanks for the recipe. It was a favorite of my boyfriend's! And me. (I might myself use a little less sugar). Its good to hear that the oil can be left out too! I'd make this again! Easy and easy to reheat for leftovers. I thought about adding apple slices too, and walnuts. We made it plain, without raisins, but I can see many possibilities!

DH made this for me while I was at work today. It's really good!! Not to gross anyone out but it's good cold. I'm slicing it and eating it like bar cookies.
DH used 1 teaspoon of oil rather than 1 tablespoon. We only had about 1 teaspoon of vanilla left so he used it and added an extra 1/2 teaspoon of cinnamon.

I just had to bring this thread back to the top in case anyone missed it. The baked oatmeal is SOOOO good. I made it last Sunday and then cut it into individual servings for breakfast all week long. I think I'm going to try it again with dried cherries and toasted almonds. Thank you so much Deanna for sharing this. It will be a regular around here for breakfasts!!!

That is it! I'm so happy! I don't know why I couldn't find it in any of my searches. All of the versions I've tried have called for applesauce (super hard to find here) or have a very different milk: oat ratio that makes it too milky.
It's in the oven now so I have a treat to look forward to in the morning! I want to try the pumpkin baked oatmeal from another thread, but that's going to have to wait until I can make some pumpkin puree.

I'll share what little I know. To my understanding CLBB members submitted recipes to greysangel. I have a recipe index posted by her in 2004 with a reminder that recipes could still be added. In my files are 30 recipes, supposedly from the cookbook, that I chose to copy as something DH and I would like. How I found them will remain a mystery. Obviously the oatmeal recipe wasn't one of them, but that has now been rectified.

I recently discovered when backing up computer files on my dying laptop (well, the keyboard anyway and all access to anything) that most or all of what I thought I saved from the CLBB at the end was not good. That included the history of my oldest son chosing to play trombone. I would love to have that, but think it is gone forever except for the memory, I do believe I have the CLBB digital cookbook that was done years earlier and has many old favorites. I am working on a borrowed laptop until I get a replacement. If you will send me a PM or tag me somehow to remind me, I will try to email it to you as soon as I am up and running again.
