No new cooking for me today. And, man, is this year going fast!
Excellent
4/24 Dark Cherry Amaretto Sour (cookingwithmammac) Not too sweet, not too sour. Used a bit of cherry-infused amaretto left over from my mock Black Forest cake.
Make Again
4/11 Old-Fashioned Blueberry Coffee Cake (BA 9/12) This was soooo good. Thawed berries worked great. Used melted butter for crumb.
4/8 Ugly-but-good Cookies (SK) Just a smidge too sweet. Try bittersweet? The perfect combo of chewy and crisp.
4/3 Marmalade Meatballs with Cider Vinegar Glaze (Dinner) 400 for 20 minutes. Used fish sauce—hot/sweet/savory.
4/1 Green Salad with Orange Marmalade Dressing and Toasted Almonds (Best Make-Ahead) Great taste—all elements went well together.
Good
4/29 Supreme Pizza Pasta Salad (Rachael Ray/jadenegro) Tasty, just not sure I would make it again. Too much oil in dressing and didn’t fully imulsify. Used green onions, not red.
4/22 Blueberry, Almond, and Lemon Cake (NYT) Good, but a little damp in the middle. Still would make again maybe try baking slightly longer. Easy and pantry ingredients. Used Bob’s GF flour.
4/1 White Sangria Salads (SL 3/14) Good, but not as good as Berries and Bubbles. The white grape? The muscato?

Hey Erin-I am going to have to check out those Ugly but Good Cookies and see if they are the same/similar as the ones I have by the same name. If they are I may put them on my list this week to use up some egg whites from my lemon bars (below). Anyway, my list.....
Excellent: -Sweet Potato Crust Pizza-Food Network -Mediterranean Eggplant Rollups-https://www.thissavoryvegan.com/mediterranean-vegan-eggplant-roll-ups/. I am not vegan so I did modify a bit but not too much. -Caramelized Onion Mushroom Lasagna-https://www.healthyseasonalrecipes.com/vegetarian-caramelized-onion-and-mushroom-lasagna/. I added spinach to one layer. -Caramelized Onion Browned Butter Noodle Kugel-rich but good-https://food52.com/recipes/76052-noodle-kugel-with-caramelized-onions-and-brown-butter -Lemon Bars-Cook's Ill.-rich
Very Good: -Vegetable 15 Bean Soup-Budget Bytes-made in my I.P. and came out nice and creamy -Indian Curry with Sweet potatoes and Eggplant-C.I. -Citrus Tahini salad dressing/sauce
Tried and True: -Mock Chopped Liver-my aunt! -African Chicken Peanut Soup-C.L. Added some spinach cause I had to use it up. I think a heartier green would have been better like collards/kale but the spinach needed to be used. Still reliable and tasty soup. -Scallops in Artichoke Tomato Broth-Giada but swapped scallops for her halibut since can't find or too pricey here -Roasted Vegetable Spread-Alton B. -Sweet Potato Hummus-C.I.-I always roast the potato instead of boiling as they do -Rise and Shine muffins -Giant (chicken) Meatball Calzone-C.I. Added some grilled onions and artichokes with the meatballs since I had them leftover from pizza night -Broccoli chicken Noodle Soup-C.L. my comfort soup but I modify. Cheddar or another real cheese instead of velveeta; more veggies and less chicken; kluski egg noodles instead of vermicelli; a few extra seasonings too like some dry mustard and dash of hot sauce etc...etc...You get the idea....not really the original anymore, but morphed into my version. -Artichoke Bean Spezzatino-Giada -Green Chicken Pozole

Erin - I might have to look up that blueberry coffee cake. Co-worker is moving on and we're holding a little Kaffeeklatch for her next week. She doesn't like store bought goods and I was thinking it's been a looonnggg time since I've done "breakfast" baking. Quiet month here. One week was so discombobulated I did take out the whole week. I think that was a (sad) first.
