Pi Day (3/14) is coming up in a couple of days, and just curious if anyone is making a pie to celebrate. There's really no connection, but I just can't pass up a good excuse to bake a pie, even if it is only for the two of us. I think I'm going to make a classic apple pie; I bake them so seldom I might as well make our favorite.
Anyone else?

Didn't even realize Pi Day was coming. No plans to bake a pie but maybe I'll think about it. Thanks for letting us know about Pi Day .

GoBlue -- what recipe do you use for your apple pie? Full topper or lattice? Sprinkle sugar on top? I can live through you...and have one slice. Thanks!

I am in! I forgot, too, but have a meeting that night. I usually bake for it and there are 8 of us so a pie sounds perfect!

I think I ;will bake a Cheesecake Pie. My tried and true recipe will be a good choice because; it is so much smaller than my traditional cheesecake recipes. It is easier and less fussy, Leftovers are no problem because cheesecakes freeze incredibly well. I freeze a cooled cheesecake uncovered, until firm, wrap it in heavy duty foil and over-wrap in a freezer bag. Thaw in the refrigerator overnight.

No pie making here, gobluem82 -- a slice of apple pie sounds really good (and maybe some vanilla ice cream). No surprise apple pie is one of my favorites.
erin -- What, you forgot. I thought you would have that day marked on your calendar. Just kidding! The people that attend that meeting are super lucky to get your cooking/baking -- it is so nice of you to do that!
emma -- I never heard of a cheesecake pie before, sounds good!

I use the tried and true recipe in the Better Homes and Gardens cookbook. No sugar on top, but I make a double crust pie with the pi symbol cut into it of course

we made this Savory Spring Vegetable and Goat Cheese Tart today for DH to take to a pi day celebration that will take place tomorrow. Had to make one sub because the creme fraiche that I grabbed turned out to be vanilla flavored creme fraiche. I used some plain Icelandic yogurt. I wish we had bought ingredients to make two because it looks and smells so good. I want some!

I did get a taste of it. There was one piece left and DH brought it home for me. Yum.
The yogurt worked fine. I'm still annoyed that I have vanilla creme fraiche to find something to do with. Creme fraiche is not something I used regularly, so yogurt is a good sub. Any plain yogurt would do.
We went to Iceland in January and I got hooked Iceland yogurt, which is actually not really yogurt. They call is Skyr. And it is a form of cheese. It is made like yogurt, only with some rennet. Siggi's is an Icelandic yogurt that you have probably seen, but the one I like best is Icelandic Provisions. Many stores here carry Icelandic Provisions brand, but only Whole Foods carries their plain yogurt. I don't like Siggi's plain yogurt. I just bought some rennet and I'm going to try to make skyr in my instant pot.
