I bought vanilla bean pods about 1.5 years ago. I bought them in bulk from Beanilla and paid about $1/bean. I got online today to order more before the holidays and the prices have skyrocketed! If I buy the beans in bulk I will still be paying $3/bean. Wow.
Have you all bought any vanilla bean pods for cheaper than $3/bean recently and where from?

Just reporting in that I was on the hunt for vanilla beans, too, and $3 was the cheapest I found locally. If you buy 15 from Penzeys, they're $2.33.

Guess I should have bought some... I remember that too. I didn't need any and for the amount of vanilla I use these days (don't bake as much), it wasn't worth stocking up for. I do remember reading something months ago about how real or fake vanilla doesn't make a difference in baked goods. I just like to know that I am using the real deal, but growing up, I do believe my mom bought the fake stuff.

I recently purchased these beans from Amazon, and they are less than $2 apiece. I'm only using them to make homemade vanilla, but they were well packaged and moist when I opened them.

Just saw some at Costco. Remembering this thread, I took, note - 2 vials of 5 long beans each for $15.89, so 1.59 a piece. This is in Indianapolis so I would think they would have the same elsewhere.

Thanks for the info on Costco's vanilla beans. I saw the Penzey's email too, but the price didn't seem to be going up that much at the time and the Beanilla prices had not jumped. This is the time of year that I check my stash and usually make another bottle of vanilla. I still have beans from my last bulk purchase, but they say the price will be up for at least a year, depending on weather. If I am in doubt about whether I will need more before next year, I may pick some up at Costco.

Looks like it is only the smaller bottles of extract (2 and 4 oz -- not on beans or large bottles, but I suspect that will help a number of people. They also have a mini baking gift box on sale and I think a pepper bonus.

I know this is a little late in the game, but when I was at the health food store today, I noticed that they had vanilla beans in the bulk spice canister section for $1.55 apiece! Another advantage is that you can buy exactly as many as you need. It was hard to tell how fresh they were without actually buying one, but I will definitely keep them in mind for homemade extract next year.

I just saw this thread; was looking for vanilla-bean substitutes. Mind if I jump in? Google searches have yielded conflicting answers on the best amount of vanilla to sub for the seeds of 1 vanilla bean. I want to try Bon Appetit's Fruity Rum Bundt Cake, & it's turning out to be an expensive cake (I bought dried cherries today & couldn't believe how much they cost--still need to buy other dried fruit, etc.). Recipe calls for one vanilla bean & I don't see how a bean vs. vanilla is going to make or break the cake--but how much to sub? Thanks!

I don't know the exact substitute, but when I make a cake, the recipes generally call for 1 or 2 teaspoons of vanilla. Since your cake has a lot of other flavors going on, my guess is that either one would be fine.

I would start at 1 tsp and adjust from there -- by smell, tasting the batter or considering the other flavors and strength of the extract. Most likely you will be at 1-2 tsp.
